White Fish in Cider Sauce

Serves 2

2 lbs white fish fillet (cod or hake)
1 onion, finely chopped
3/4 cup double cream
1/2 tsp fresh mint, chopped
2 apples, peeled & diced
1 1/4 cups dry cider
Butter
Salt & pepper

Heat butter in a frying pan. Add onions and fry for 5 minutes. Add cider, mint, salt and pepper to taste. Bring to a boil and boil for 5 minutes, then turn heat to low. Add fish fillets and poach for 10-15 minutes. Remove the fish and keep warm, then reduce the sauce and add the apple, thickening it with the cream. Take care the fish is poached not boiled.
